gf/cf update


Yay! We found dairy free ice cream he loves. It's called So Delicious.


Some of his staple meals:

eggs

gf/cf donuts, waffles w/ pb, french toast sticks

gf/cf banana muffins homemade (recipe to come)...

panda puffs cereal

baked chicken

sausage

ham steak with gf toast and jelly

More veggies than usual- hooray!

Natural popcorn (Costco carries some!)

tons of fruit

hot dogs w/o the bun

pork

still working on rice- he has never liked the texture so it's going to take time for this one


This is so much more variety in his diet than he used to have. It's awesome to see him expand his tastes and I was not expecting that to happen so fast. He has been pretty picky and it's nice to see a few new things plugged in each week.


The hard part was telling him we couldn't just go for pizza. That was his favorite. He has handled this new diet so well it's inspiring. We eat a lot less fast food and when we are in a crunch and need to, I order him a plain grilled chicken sandwich without the bun and he loves it. Each week we learn more and find new things we might not have tried before and he keeps amazing me with his ability to go with the flow. Luckilyhe is doing well taking his supplements with grape juice and asks for them if I am a minute late on them.

Hi, my husband and I have been gluten-free for about a year now and it was tough going at first... but once we found the brand Udi's, everything got a whole lot better. They made delicious sandwich bread, the closest to "real" bread I've ever come across... and their blueberry muffins and cinnamon buns are a bit pricey, but to-die-for. We also like Sorbet, usually haagen-daas. It's gluten and dairy free, but still a great "ice cream"-like treat, and they have actually started carrying not just fruit, but chocolate-flavored. =]

I have Celiac and cook and bake from scratch. I wanted to give you some hope. Udi's bread is VERY soft. Best bread out there. If you can find it in stores, order it online. Also, Udi's and great pizza crust and bagels. Now, for the flour to use to bake with. I have tried almost all of the flour blends and I have to say that THE BEST ONE is Andreas Gluten Free Flour Blend. You can order it online. It is a cup for cup, but it is so much like regular flour when you bake it's scary. :)

thanks ladies for the tips.

Melanie recently turned us on to Udi's and we love it as well. I have only gotten the bread so I will keep a lookout for the other items!

Do you have the Adhd and Autism cookbook by Compart and Laake? The veggie lasagna is the BEST stuff ever. My 5 year old would eat it 3 meals a day if I would let him!

One thing to note: So Delicious says on their label (at least in Canada) that it may contain dairy. :(

The kitchen pantry bread mixes(green box-in case I mixed up the name) are actually really good. Felt more like real btead than udi's. I use udi's buns, but make this for my bread. Freezes and reheats well also. As far as rice goes, I used to hate it because of the texture. I tried different amounts of liquid to find a consistency I could tolerate. I found that the perfectly steamed rice like sy asian food pkaces is the best if served with a saucy food for flavor. Good luck!
